Winter is a slow time in Wine Country, vines are still dormant, waiting patiently to begin waking and stretching in preparation for the spring and summer months.
It’s also almost Valentine’s Day! (Or as single people call it: “oh, did you want some wine too?”) But that doesn’t mean singles can’t be happy for all the wonderful couples out there; in fact it means they’ll probably be happier. Varietal of the Month: Cabernet Franc
A lesser known yet widely grown grape, Cabernet Franc originates from the Bordeaux region and is fairly similar to Cabernet Sauvignon. In fact it was a crossing of Cabernet Franc and Sauvignon Blanc that created Cabernet Sauvignon, hence it’s name. And while Cabernet Sauvignon rebelled a bit against its parents by becoming a heartier, more popular offering, it’s characteristics in the glass are usually not dissimilar to Cabernet Franc. Guess the “grape doesn’t fall far from the vine.”
Like Cabernet Sauvignon, Cabernet Franc is adaptable to many soil types and environments. It ripens earlier than Cabernet Sauvignon, though, and has thinner skinned, smaller berries. Often used in blends to give more roundness and character to more “one note” varietals, it also makes a delightfully complex wine on its own.
Our Cabernet Franc is aged in new oak which gives it hints of cedar, smokiness and vanilla. It’s extremely versatile and delicious with grilled meats, including fish, spicy chicken or even dark chocolate. A perfect Valentines choice!

25 Year Balsamic Vinegar: There are many uses for vinegar, some you might not expect. The longer it’s aged the more sweetness and smoothness vinegar begins to display. Our 25 Year aged Balsamic is divine drizzled over ice cream or fruit, such as strawberries or pear. It’s also perfect for a summertime Caprese salad with fresh heirloom tomatoes and buffalo mozzarella. But use sparingly, a little goes a long way!
